Mint Chocolate Cookies Recipe
I have tried many variations to get this cookie perfect. This recipe is easy and they come out so soft and chewy you can't help but love them. 

While I am not the best photographer, these cookies show how thick and you can see the chunks of mint inside them.


Ingredients:
  • 2 cup flour
  • 2/3 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter
  • 2/3 cup white sugar
  • 2/3 cup brown sugar
  • 1 teaspoon Vanilla extract
  • 2 egg
  • 1 cup Andes Peppermint Baking Chips

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix together the flour, cocoa powder, baking soda and salt and set aside.
  3. In a mixing bowl, blend with Mixer the butter, sugar, and Vanilla extract. Cream together until smooth and fluffy.
  4. Add the egg and mix well.
  5. Slowly add the dry ingredients. Blend well.
  6. Add the peppermint chips and hand mix them into the batter
  7. Chill dough in refrigerator for about 30 minutes.
  8. Place a spoonful of dough on a lightly greased cookie sheet.
  9. Bake 9-11 minutes.
  10. Let cool completely then enjoy!!!
