I have tried many variations to get this cookie perfect. This recipe is easy and they come out so soft and chewy you can't help but love them.
While I am not the best photographer, these cookies show how thick and you can see the chunks of mint inside them.

Ingredients:
- 2 cup flour
- 2/3 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butter
- 2/3 cup white sugar
- 2/3 cup brown sugar
- 1 teaspoon Vanilla extract
- 2 egg
- 1 cup Andes Peppermint Baking Chips
Directions:
- Preheat oven to 350 degrees.
- Mix together the flour, cocoa powder, baking soda and salt and set aside.
- In a mixing bowl, blend with Mixer the butter, sugar, and Vanilla extract. Cream together until smooth and fluffy.
- Add the egg and mix well.
- Slowly add the dry ingredients. Blend well.
- Add the peppermint chips and hand mix them into the batter
- Chill dough in refrigerator for about 30 minutes.
- Place a spoonful of dough on a lightly greased cookie sheet.
- Bake 9-11 minutes.
- Let cool completely then enjoy!!!
