These Chocolate Chip Shortbread are a buttery shortbread cookie with lots of chocolate chips. They are quick and easy to throw together, but are packed full of flavor and deliciousness. This recipe is for a half batch, but you can double it to make more if you want! 

Ingredients:
  • 1/2 cup Butter softened
  • 1 tsp Vanilla Extract
  • 1/2 cup sugar
  • 1 cup flour 
  • 1/4 tsp salt
  • 1/2 cup chocolate chips (I like the mini chips)  
Directions:

  1. Preheat oven to 375 degrees.
  2. In a bowl cream together butter and sugar until light and fluffy. 
  3. Mix in vanilla.
  4. Slowly Add flour and salt and mix until well combined.
  5. Fold in chocolate chips.
  6. Scoop 1-inch sized balls of dough onto a parchment lined baking sheet. 
  7. Bake for 10-12 minutes until the edges are golden brown.
  8. Remove from oven and let cool.  
  9. Enjoy!!
